Kid-Friendly Blender Cottage Cheese Pancakes
These kid-friendly blender cottage cheese pancakes are quick, nutritious, and perfect for busy mornings! - 2 Eggland's Best eggs
- 1/2 cup rolled oats
- 5.3 oz cottage cheese or about 1/2 cup
- 1 ripe banana
- 1/2 cup fresh spinach
- 1/4 tsp cinnamon
Add all ingredients to a high-speed blender. Blend until smooth and creamy. Let the batter sit for a minute or two to thicken slightly.
Lightly grease a non-stick skillet or griddle and heat over medium-low heat.
Pour small circles of batter onto the pan. Cook for about 2–3 minutes, until bubbles start to form on the surface and the edges look set. Flip and cook for another 1–2 minutes on the other side.
Serve warm. Serve plain for babies and toddlers; they are naturally sweetened and your kids will love them as-is! Serve with butter, maple syrup, jelly, or yogurt for older kids if desired.
